Nick Bognar's 18-course omakase counter in Sado's courtyard

Pavilion is chef Nick Bognar’s omakase counter, housed in a separate pavilion in the back courtyard of his restaurant Sado at 5201 Shaw Avenue. It opened on December 5, 2024, in a room designed by Tao + Lee around a six-seat chef’s counter. Bognar was named a Food & Wine Best New Chef in 2020 and also runs iNDO, and Sado was a James Beard Best New Restaurant semifinalist in 2024.
The 18-course menu blends Japanese sushi technique with Bognar’s Thai heritage, featuring binchotan-grilled and dry-aged nigiri and sashimi alongside small seasonal dishes. Pastry is led by Sarah Osborn, and wine and sake pairings are optional.
At opening, Feast reported two seatings per night, Thursday through Sunday, priced at $250 per person for the Bognar-hosted experience or $175 for a more casual omakase led by Sado’s chefs, with tax and gratuity included. Seats are sold as prepaid tickets on Resy in periodic drops, so plan well ahead and check current pricing when booking.
