Modern Italian-American corner spot in a former gas station

Collina Eatery sits at the corner of Macklind and Bischoff in a building that was once a gas station. Chef Carlos Hernandez and Joe Smugala, who earlier worked together at Carnivore, ran it as Pit Stop and rebranded it as Collina in spring 2024 with a more Italian-leaning menu. The pair also own Marconi Mercato and El Milagro Azteca.
Hernandez mixes Italian, French and Asian influences. The menu includes appetizers, sandwiches, freshly made pastas such as linguine di mare, salads and a fried chicken that has a local following. Earlier dishes included lobster risotto arancini and pan-seared snapper. The bar serves creative cocktails, wine, local craft beer and cider.
The small space has a bar, a dining room and a booth room. A working garage door opens onto two patios with about 50 seats. Collina serves dinner Wednesday through Sunday and has happy hour from 5–6pm Wednesday through Friday. It offers online ordering, reservations and catering.
